Recipe for Mother’s Day – Baked Fudge


Here is a recipe that would be great for Mother’s Day next weekend – you can even get the kids to help make this. It’s a warm chocolate hug, is what it is, and best of all it’s easy and fast. I’ve made this recipe a while back, but just now getting around to posting it – my apologies.

Serves 4


  • 2 Whole eggs
  • 1 cup Granulated sugar
  • 2 tablespoons (heaping) Cocoa (good quality cocoa is important)
  • 2 tablespoons All-purpose flour
  • 1 stick Butter, melted
  • 1 teaspoon Vanilla extract


Preheat the oven to 325 degrees F.
Beat the eggs with a whisk or a handheld mixer, until light in color. Beat in the sugar until just combined. Add the cocoa, flour, melted butter and vanilla extract. Mix gently until well combined.Pour the batter into 4 large ramekins. Set the ramekins into a larger pan filled halfway with hot water, being careful not to spill water into the ramekins.

Bake until the upper crust is crispy and the rest of the batter is firm but not set, 40 to 50 minutes. It should NOT be like a brownie, more like a souffle texture.

It’s great on its own, but if you feel extra naughty, you can serve with sweetened whipped cream or vanilla ice cream and top with strawberries!
