OK, I know what you are thinking, a raw dessert? Really? YES, my first time ever making a RAW dessert, no baking involved. These tarts don’t contain any flour, dairy, or white sugar. All ingredients are whole and organic and none of those weird sounding ingredients either! These chocolate mousse tarts are so velvety and rich, and so EASY to make, anybody can do it……really…..These are great for people who are watching their sugar intake or those who are vegetarian/vegan (no dairy in these tarts). PLUS, there is a secret ingredient in here that you would never knew was in there unless you made them. Enjoy!
Ingredients
For the Crust
- 1 ½ cups Organic Walnuts
- 2 Tbsp. Organic Raw Agave Nectar
Chocolate Avocado Mousse
- 4 ripe Organic Avocados
- 10 Dried Dates, chopped into small pieces
- 4 Tb spoons Organic Raw Agave nectar
- 2 Tb spoons high-quality Cacao Powder
- 1/4 teaspoon Vanilla Extract
Directions
Place walnuts in a food processor and pulse until finely chopped. Add the maple syrup and pulse until the mixture is combined. The mixture should resemble a graham cracker crust.
In small glasses or a muffin pan place a couple tablespoons of the walnut mixture and press into the bottom. Press firmly so that the walnut mixture is compact and holds together. You should be able to fill about 8 cups with the walnut crust. Refrigerate.
Meanwhile, chop the dates into small pieces.
Cut open the avocados, remove the pit, and scoop out into a clean food processor along with the other ingredients. Blend until smooth.
Refrigerate for 1 hour, serve.
For leftover mousse, place in the refrigerator (for up to 2 days) and eat like a pudding.
