When life becomes tough and frustrating, what does one do? Cooks of course! Had a stressful last few weeks at school, but only moving forward and hoping for the best. Meanwhile, my frustration can be melted away by cooking up something delicious for hubby and I. Cooking for me is an escape from the daily troubles, a way for me to focus and lose myself in the task at hand, almost a zen like feeling. I haven’t been able to cook anything fun in a few weeks now, so it’s time I take a break from studying and get back into the kitchen.
I have to admit, I’ve only had lamb twice in my life. Once was lamb kabobs, the other time it was a lamb gyro at a Greek Festival a few years ago. To me, lamb is “gaimy” and because it’s a lean meat, it’s usually dry. The plan is, to make it myself. Maybe the two times I’ve had it and didn’t like was a fluke. So today, I plan to visit our local Whole Foods store and gather up some ingredients to make Lamb Gyros with Tzatziki sauce and a side of roasted Parmesan Baby Potatoes. For dessert, I am making a healthy version of a strawberry cheesecake. It’s strawberries filled with cream, sprinkled with graham crackers, and dipped in dark chocolate. The best part is, hubby doesn’t have a clue about tonight’s dinner and I plan on keeping it a surprise. He thinks we are going out for some Thai food. Shhhhh…..
