I have not blogged in a week! Have been so busy with grad school. But today (Friday) I decided to take a few minutes to relax my brain a bit and made a fruit compote. Kompot (or stewed fruit) is a traditional Russian dessert beverage that combines an assortment of fruit. This makes a great use of those fruits that are less perfect this time of year – like strawberries and blueberries. This is a great summer drink, served cold on a hot day. You can use any mix of fruit you like, but I recommend using sturdy fruit like apples, grapes, strawberries, etc.. Hope you enjoy it!
Ingredients
- 1 package of Organic Strawberries, sliced in half
- 1 package of Organic Blueberries, whole
- 2 Organic Pears, cut into cubes
- 1 Organic Orange, sliced into half moons
- Handful of Organic Raisins
- 3-4 Tbspoons of Organic Sugar (I use Trader Joe’s)
- 8 cups of Water
Directions
In a large pot, bring water to boil. Meanwhile, wash and cut all the fruit. Once the water boiled, lower the heat to medium, add all the fruit, bring to boil, reduce heat to simmer. Remove from heat once all the fruit is tender – about 5-10 minutes. Add sugar, depending on how sweet you like it, you can add and taste, if not sweet enough, add more. Mix well to dissolve the sugar. Let cool, refrigerate. Enjoy!
