Russian Pancakes (Blinchiki)

These pancakes are a great snack, especially when you are on the go and need something comforting with your morning tea or coffee. In Russia, as well as in our house, these pancakes are served with sour cream or a fruit spread, or even plain. This is my mom’s recipe that I tweaked a bit. Enjoy!



  • 1.5 cups Self-rising flour
  • 3/4 cup Buttermilk
  • 1 Large egg
  • 1/3 cup Water (room temperature)
  • 1/4 cup Olive oil (plus more for cooking)
  • 1 TSpoon Granulated Sugar
  • Pinch of salt


In a mixing bowl, combine all ingredients, mix thoroughly with a spoon. The batter should not be too thick or too thin. If thin, add more flour, if too thick add more water. The consistency should be that of pancake batter. Heat a large frying pan on medium heat. Add olive oil, add half a ladle of batter on to the pan, fry on both sides until golden. Serve warm or cold topped with sour cream or a fruit spread.
